One of my dear friends loves sharing websites and blogs with me, particularly ones that involve food… A week or so ago she had posted this great website on my Facebook page and it’s definitely an awesome website! I actually made one of the recipes that day, and the day after! I’d say check it out!
Its mostly or possibly all vegetarian dishes which is also great because it shows you so many different ways to make sure you eat your veggies. Also I have been thinking about doing a version of meatless Mondays, I just need to decide which day it will be. I suggest you all do this actually; having a meat free day is healthy and great for the world! If you don’t believe me look it up! What I made was their Quinoa Quesadillas. I made a black bean quinoa salad first with some red onions, red, yellow and green bell peppers, I also added some feta and sundried tomatoes. First I made the quinoa when it was done I cut up some feta and sundried tomatoes. Then I cut the red onions and peppers and roasted these a bit, added the black beans. Now all you need to do is put the quesadilla on the pan put some cheese on it, put on the vegetables and quinoa and then add some mixed greens on top, close the quesadilla and your done!
