This is one of my all time favorite recipes… I have been using it since I was in high school and have never made another since. Back in the day I found it on epicurious and I love it as much now as I did back then. It’s so easy and simple to make and you get to eat the brownies about an hour or less after you started making them! If you want to make the most amazing brownies, that are crunchy on the outside, and chewy on the inside, than this is the recipe to use. It is amazing with some coffee, tea, ice cream, milk, or just on its own.
- 1 ¼ tablespoon unsalted butter
- 1 ¼ cups sugar
- ¾ cup plus 2 tablespoons unsweetened cocoa powder
- ¼ teaspoon salt
- ½ teaspoon pure vanilla extract
- 2 cold large eggs
- ½ cup all-purpose flour
- ¾ cup walnut or pecan pieces
First things first, turn on your oven to 162 degrees Celsius. Then line the baking pan, or butter it, which is what I usually do.
Combine the butter, sugar, cocoa, and salt in a medium sizes heatproof bowl and put it in a pan with some simmering water. Don’t fill the pan too much or you will end up getting water into your mixture. Stir this every once in a while until the butter is melted and properly incorporated into the rest of the mixture.
Then with a wooden spoon mix in the vanilla, and the eggs, one at a time. Mix thoroughly. When it looks properly mixed, stir in the flour until you cant see it anymore. If you decide to add nuts to your brownies, this would be the time to do so.
Spread the mixture in the pan. Bake for about 25 minutes. Check for done-ness with a toothpick, it should come out slightly brown.
