Typical Greek Lemon Chicken

chicken4A few days ago I got the privilege of being cooked for. My boyfriend made me some delicious Greek chicken! I must say I really enjoyed this dish a lot. It is super simple and still so tasty! We used an amazing Greek olive oil, which makes all the difference in the world… It was a whole chicken with potatoes.

– Whole chicken
– Potatoes
– Dried oregano
– Dried thyme
– 3 Lemons
– Olive oil (greek is nice and flavourful if you can find it)
– Salt
– Pepper
– Cherry tomatoes

– Set your oven to 200 degrees Celcius. Place the chicken in a oven proof dish. Peel the potatoes and then cut them up so that they will fit around the chicken.

chicken7– In a bowl mix the lemon juice with olive oil. Then drizzle this over the chicken and potatoes.
chicken6– Add some oregano, thyme, salt and pepper to the chicken and potatoes. Put this in the oven for about an hour to one and a half hour. Make sure to keep drizzling some of the lemon mixture on top of the chicken so that it doesn’t dry out.

– Both the chicken and the potatoes should be nice and crisp. This can be served with a salad or some yummy veggies.
