Epic Chicken Cacciatore

A few days ago my brother made this amazing dish… I needed to share it with you all! It’s a recipe from hostthetoast,com and its rather simple just takes a while, so make sure that you start in advance!

The ingredients are:
– 4 chicken thighs, with bone, and skin
– Salt and pepper
– 1/3 cup all purpose flour
– 2 Tablespoons butter
– 2 Tablespoons olive oil
– 1.5 pounds tomatoes
– 1 Small red pepper
– 1 Small orange bell pepper
– 2/3 Cup chicken stock
– 1 Tablespoon tomato paste
– 1 Tablespoon balsamic vinegar
– 1/2 Teaspoon dried parsley
– 1/2 Teaspoon dried oregano
– 1/2 Teaspoon dried thyme
– 1/2 Teaspoon dried basil
– 10 Pearl onions
– 3 Garlic cloves
– Crushed red pepper
– 1/2 Teaspoon sugar
– 1 Tablespoon capers, drained
– 1/4 Cup fresh basil
– pasta and bread, to serve the dish with

Method:
1. Preheat the oven to 175 degrees Celcius.
2. Season the chicken with salt and pepper. Then dip them in flour, and shake off the excess flour.

chicken 83. Heat the olive oil and butter in a skillet (one that you can put in the oven) brown the chicken and remove. Put the chicken aside.
4. In a blender combine half the tomatoes, half the peppers, chicken stock, tomato paste, balsamic vinegar, and herbs. Blend this until its a smooth consistency.

5. Put the garlic and pearl onions in the pan, sauté these. Add the remaining pepper and tomatoes into the pan now, sauté once again. Pour the tomato mixture from the blender into the pan. Season with salt, pepper, and crushed red pepper. Don’t forget to taste it!!!

6. Bring to a boil. Now put the chicken on top of everything else. Cook for a minute or two, and then put the pan in the oven, uncovered, this will take between 45 minutes to an hour.

Plate this with some fresh basil on top, and serve with pasta and bread.
